Fairy *Victoria sponge* cupcakes
Ahh not related to this post but It’s been so long since I’ve posted, I’ve been meaning to post this for while now but I’ve been super busy doing this diet/cleanse which I will be posting about soon!
I started making cupcakes for the first time just over a year ago, realised I really enjoyed it and I actually could bake and I carried on from there really. I’ve made cupcakes for weddings, parties, special occasions and just cupcakes in general. I took a break from the baking to sell and started to bake other things.
Basically this recipe I am posting is just ordinary vanilla cupcakes but with a strawberry filling! I prefer cupcakes to making a big cake.
8oz caster sugar
4 medium eggs
8oz self raising flour
1 tbsp of vanilla flavouring
If you wanted less cupcakes, half these ingredients. And so on if you want more.
I now use an electric mixer and oh my gosh it makes the world of difference, but when I started out I used a bowl and a wooden spoon so its preference at this point.
First I place butter and sugar and cream it together until its light and fluffy.
I then beat in the eggs, one at a time adding some flour with the last egg *To prevent curdling*
I then add the rest of the flour and mix. If I’m making chocolate cupcakes I add cocoa powder with the flour. Add 1-2 tbsp of vanilla syrup and either pour into your cake tins or into your cupcake cases!
Once baked, take out and let cool. I simply cut a round hole out of the middle of the cupcake and then fill it in with jam, to follow I either make vanilla butter cream *which is just butter and icing sugar* or, like on this occasion I use whipped cream which makes them delicious and fresh. I sprinkle some sprinkles and there you have little fairy cakes.
